Step 01
Collect the sap
16,500 taps on tubing and vacuum move sap from the trees to four pump-houses across the sugar bush.

Step 02
Move it to the camp
Raw sap from 7,500 taps is trucked in. The remaining 9,000 taps are concentrated at the pump-house first.

Step 03
Reverse osmosis
Our 8-post CDL 25+ RO heats and removes some of the water from the sap before boiling, making the evaporation process much shorter.

Step 04
Boil on the evaporator
Our 5×15 CDL Master evaporator turns concentrated sap into finished syrup — about 90 gallons an hour.

Step 05
Filter
Fine filtering removes the naturally-occurring sugar sand.

Step 06
Grade & bottle
Each batch is graded, then bottled on site — nothing added, nothing shipped in.
Grades and Uses
Amber Rich vs. Dark Robust
Amber Rich
Lighter in color, milder in flavor. Boiled earlier in the season when sap is at its purest. If you want your maple to complement rather than dominate, choose Amber Rich.
Dark Robust
Darker, bolder, and unmistakably maple. Boiled later in the season. If you want maple to be the flavor you notice first, this is it.
Grades of Maple Syrup
Golden with Delicate Taste
Light, golden color with a mild, delicate taste. Excellent as a table syrup or over ice cream or yogurt.
Amber with Rich Taste
A amber color and full-bodied flavor, this class of syrup is the product of choice for consumers who desire the classic maple syrup flavor.
Dark with Robust Taste
A dark amber color with a more pronounced maple flavor, this class will satisfy those consumers who desire the strong flavors of what has been known as Grade B.
Very Dark with Strong Taste
Nearly black, this syrup has a strong flavor that translates well to cooking, where the maple flavor will carry through to the finished dish.
